DACC is about sharing the Art of Cheesemaking, educating visitors about how great cheeses are created and sharing stories of our Cheese Industry in Wisconsin.

A Member of the Wisconsin Milk Marketing Board

Under the leadership of Wisconsin Master Cheesemaker Mike Brennenstuhl, Door Artisan Cheese will produce both traditional Wisconsin cheeses and original-recipe creations. Guests will have a unique opportunity to see cheesemaking first hand through a large viewing window and to ask questions to the cheesemakers wearing microphones. Tours will also be offered to view the three caves on the property’s lower level to help explain the role of aging and affinage in developing fine cheeses.
