Top Hat Cheddar -Traditional English style cloth wrapped cheddar made in a Truckle shape. Cave aged a minimum of 6 months for a smooth and rich flavor
Creama Pressato - An Italian inspired Asiago made from whole milk. Sweet and buttery, reminiscent of sweet cream and fresh milk. Delicate and creamy with a slightly salty aftertaste.
Valmy - Our Master Cheesemaker's original recipe cheese honoring the Belgian community of Door County, WI. Valmy is a beer washed rind cheese, with hints of the yeasts and malts emerging from the chocolate stout style beer.
Daclette - An alpine style, semi firm cheese reminiscent of Swiss raclette. Hand rubbed with olive oil and Spanish smoked paprika.
Zivile - Pronounced Jiv-lay. A Swedish style fontina aged 2-5 months. A semi soft creamy cheese with a mild clean flavor.
